Starting as an hourly employee, he worked his way up to Regional Manager with Specialty Restaurants, where he oversaw day-to-day operations for five full-service restaurants across Colorado. Having called Colorado home for nearly 25 years, Miguel has spent the last 15 years as an owner and operator, guiding and expanding his company, Miguel's, from one small restaurant to two thriving locations in Colorado Springs. His business acumen, vision, and relentless drive to elevate standards have shaped the foundation for success at Miguel's Mexican Bar & Grill.
Manuel's passion for cooking has been lifelong. His leadership and creativity in the kitchen have earned him recognition as an exceptional Executive Chef and valued Owner. As Corporate Owner, he oversees the culinary operations within the Miguel's family, ensuring consistency, quality, and innovation across every menu. Manuel's extensive background in continental cuisine and his tenure as a regional chef with Specialty restaurants—where he managed five high-performing kitchens—have refined his dedication to excellence.
